A half hidden dose of greens

I am a very blessed lady as my family LOVES their vegetables! But I know lots of Mamas out there have a hard time getting their little ones (or their hubbies for that matter!) to eat "rabbit food" as my husband jokingly calls it.

Never has there been a better time of year then around St. Patrick's day to sneak in some greens to everyday favorites and use the holiday as an excuse. Just tell them its a secret ingredient from the Leprechaun's! :)

  • Add frozen chopped spinach to dumplings or biscuits. Adding a couple teaspoons of Parmesan cheese takes the edge off any "green" taste they might notice.
  • Add grated zucchini to cupcakes, muffins, or cakes.
  • Steam and chop up kale, radish, or mustard greens and add to soups, rice, or other grains.
  • Consider brussel sprouts instead of the traditional cabbage with your corned beef. They have a sweeter taste when cooked with carrots and onions, and a higher nutritional value.

Have a great holiday weekend!
